Rice Cooker (Pan)cake- I Went There

If you live in the internet as much as I do, there’s a good chance you’ve seen someone rave/rant about this revolutionary(?) idea of cooking a single fat pancake in a rice cooker the last few days.

(I’m so sorry if you’re here for legitimate advice about babies or anything inspirational and/or not internet fads. This will just be me contributing to the internet regurgitating itself. I,the mother bird to the baby birds who are hungry for more information about the legendary Rice Cooker Pancake.)

Anyway. I read about this thing where you make pancake mix in your rice cooker bowl, then just, you know, cook it in there. I have no idea why this idea seemed so novel to me, but we had the stuff to make pancakes, and we have a rice cooker.

I told myself it was like a “fun” summer bucket list kind of thing to do with the kids. I’m really running low on creativity, people.

To make it super fancy, I added chocolate chips. Frankly, I’m disappointed that I even found any in the pantry because HOW did I not know we had chocolate chips in the pantry before this?

So this isn’t really a tutorial because, um, it’s so crazy easy. You can read more about it here if you want. You just make the batch of pancakes, stir in anything you want to add, put it in the rice cooker (if you didn’t make it in there to begin with), and turn it on.

The one thing I thought I need to share is that our rice cooker only has 2 modes- cook and warm. Normally, it doesn’t switch to warm until it’s DONE cooking the rice. But this wasn’t rice.

So obviously the rice cooker was like, “Are you f-ing kidding me? I’m out. You can’t make me cook this.” And it switched to warm after a few minutes.

I turned it on again to the cook mode a few times, but I’m not even sure that was necessary. I think it cooked just fine on warm mode, and it took about 45 minutes.

The final result was definitely dense, not at all fluffy. It wasn’t the best cake I’ve ever had, but it wasn’t terrible. It was fun and easy.

And now I’ve officially ruined the chance my kids will eat anything that comes from a rice cooker other than a cake.
