The food situation in this house is a bad one, friends. We’ve basically been living off of fast food. I mean, yes, I know… I JUST HAD A BABY. Good excuse, I think. But no. This must stop. We have to get back into the habit of, like, cooking and stuff. For our health, but mostly for our budget.
Cooking is like working out to me. When I stop doing it for a while, my physique suffers (because Wendy’s Pretzel Burgers), and I’m also scared to jump back in.
Anyway, I need to get over it. I’m hoping to get my act together enough in the next week to start meal planning again (or just sticking to the meal plan programs I subscribe to). I’ll also be taking the coupons the Pork Be Inspired campaign sent me to the grocery store next time to stock up on some meat.
Remember when I made that Summer Pork Chop Salad for the National Pork Board as part of the Pork Be Inspired campaign? Dijon rosemary looks good!
I saw several that looked good, but clicked on Grilled Pork Spiedies because I wondered what the heck a Spiedie was. They sound really yummy and versatile, so I’ll make that my choice – followed closely by your salad 😉
I also liked the sound of the Speidies. I’ve never seen them before, and really like cooking with herbs.

It’s a toss up between your strawberry pork salad and the lemon basil grilled chops. They both look upper yum. If you forced me to pick one, I’ll go with the lemon, since in reality I always choose meat over salads!

To be honest, yours sounds the best to me! I love a fruit and nut salad, and I think the pork would compliment it really well. Normally I would add a salty cheese like feta, but the pork would add the saltiness and warmth to the salad. Yummy!
